Tie 2 thyme sprigs together with butcher's twine. Repeat with 2 more sprigs. Place the steaks over indirect heat, and then place the thyme sprigs on top of the steaks. Place the dish in the smoker. Smoke until the cheese is nice and melted, about 30 minutes. Serve warm. I'm sure his BBQ sections will be a little Meathead-esque in that he does get down to the heart of technique in his videos, although his style doesn't necessarily allow him to highlight it as much as he'd like I'm sure. One thing I've always admired about him is that he is able to consistently turn out perfect steaks (and on common equipment, such as the Weber Kettle).
